KDA_3_50114A1 - --In the RIC there were boxes of re-hydrated hashbrown potatoes which measured 74.4F and 86.4F. The PIC said the hashbrowns had been rehydrated before 8 AM and left on the counter. He said they were placed in the RIC when the inspectors arrived. The temperatures were measured at 2 PM. KDA_3_50116A1 - --A plate of cooked hashbrowns, were sitting on the counter at 121F. The PIC said he was unsure how long they had been there. COS-discarded. Gravy was holding on the steamtable at 119F and mashed potatoes were 121F. The items had been on the table since lunch. COS-mashed potatoes were reheated and the gravy was discarded. (Repeat) KDA_3_50116A2 - --In the bottom of the make table, waffle batter measured 75.6F and cheese measured 64.7F. In the top of the make table sliced cheese was 70.5F, diced tomatoes 70.1F, canned mushrooms 68.8f, cubed beef 68F, sliced turkey 67.7F, peas 65.3F, and sliced tomatoes were 70.5F. The ambient temperature was 66.9F. The PIC said the foods had been in the table greater than 4 hours. COS-discarded. In the apartment sized RIC milk measured at 44.6F. The unit was packed full of milk and orange juice. COS-discarded. (Repeat) KDA_3_50118A1 - --In the RIC sliced pork roast had a prep date of 8/16, sliced ham had a sliced date of 8/19 and pre-cooked sausage links had an open date of 8/20. The items had been held greater than 7 days. COS-discarded. KDA_3_50118A2 - --In the RIC there was a container of diced tomatoes and a chunk of ham with no date marks. The PIC said they had been opened within the last 2-3 days. There was a pan of sliced turkey, a fruit salad containing cut cantaloupe,and a bag of pre-cooked chicken fried steaks lacking date marks. The PIC said they had been opened/prepared greater than 24 hours ago. In the WIC a pan of sliced turkey lacked a date mark. The PIC said the turkey was cut on Tuesday. There was a cooked pork roast with no date. The PIC said it was cooked on Saturday. In the wait station RIC a pitcher of tomato juice lacked a date mark. The PIc said it was opened on Sunday. In the pie cooler, made on site cream pies lacked date marking. The PIC said the pies were made 2 days ago. COS-all items were dated. (Repeat) KDA_3_60211B5 - --Labels for bread, cookies, and pies packaged in the establishment lack possible allergens. KDA_4_20211A2 - --Large mixing bowls had large dents and cracks in them. (They were repaired with duct tape). There was a wire strainer with broken metal pieces and a rubber spatula that was cracked and broken. KDA_4_30111 - --The make table was not holding PHFs at 41F or below. The ambient temperature was 66.9F. COS-inspector instructed to discontinue use of the unit until it is repaired. KDA_4_60111A - --There was a mixer attachment, stored as clean with dried food debris on it. There was a ladle, stored as clean with food debris on it. There were lids, pitchers and food storage containers, stored as clean, with stickers and sticker residue on them. Inspector instructed to clean. (Repeat) KDA_6_50112A - --There was an accumulation of dried food and grease on the floors under the equipment and in the corners. KDA_7_20111A - --On the ledge of the steam table where food was hot holding, there was a pitcher of bleach water being stored. At the baking table, antiseptic spray and and lotion were being stored on a shelf above where food is prepared.
