4-102.11(B)(1) - --In the cooler in the kitchen there are apples being stored in a plastic Wal-Mart grocery bag. The apples are in direct contact with the plastic of the bag. COS - the apples were removed from the grocery bag. KDA_5_20314 - or, Installing an APPROVED backflow prevention device as specified under § 5-202.14. KDA_5_40211 - --The apples were washed in the directly plumbed sink with a garbage disposal installed below. Let staff know that food products may not be placed below the flood rim of sinks that are directly connected to the sewer lines. If they would like, an indirectly plumbed sink may be used. Alternatively, they could use a large pan that is taller than the sink by a minimum of 1 inch, place a colander in the top of the pan, and rinse the apples in the colander, letting them drain out. This way, the apples would be above the edge of the flood rim and may still be washed off. COS - the apples were removed from the sink. KDA_7_10211 - --There is an unlabeled spray bottle with a liquid inside in the cabinet below the hand sink in the kitchen. It was identified by the kitchen manager as being soapy water. COS - she dumped the spray bottle out. KDA_7_20111A - --There is a bucket of sanitizer sitting on a shelf in the kitchen directly next to a box of graham crackers. Corrected on Site (COS) - the bucket of sanitizer was removed/the shelves rearranged upon suggestion. KDA_7_20111B - --There is a bucket of sanitizer on a shelf in the kitchen sitting directly above boxes of graham crackers that are on the bottom shelf. COS - the shelves were rearranged and the sanitizer put on the bottom shelf. KDA_Defacto - --200ppm Quaternary Ammonia in 3 vat sink.
