Recommend using the silo method to separate different types of raw animal foods such as beef, fish (including shellfish) lamb, pork, and poultry. Please be aware that raw fish, including shell fish, pose a high risk for allergen cross contact and must be stored so it can’t contact other foods. KDA_3_50118A2 - --In a retail case, six packages of cooked on site ready to eat ribs were date marked "sold on 9/14/15. The sticker covered an identical sticker that was dated sold on 9/11/15. As per the manager, the ribs were cooked and cooled on 9/11/15 (re-dated). The term "sold on" is not a proper term for date marking. Use a made on or packed on date and/or use by or sell by. KDA_3_60211B4 - --The following packed on site foods lack the address of the store on the labeling, all raw meat and poultry products, BBQ seasoning, cucumbers, pulled pork, and ribs. KDA_3_60212B - --Cooked on site ready to eat ribs (six packages) had a store sticker stating sold on 9/14/15 covering another store sticker that stated sold on 9/11/15. KDA_4_60111A - --Soil and grime on cutting boards in the meat department. Also, dried meat is in the meat grinder on a rubber gasket and on the shaft in one spot. KDA_4_60111C - --Dust is built up on fins and fan blade guards on cooling units in the meat department and meat department walk in cooler. There is a strong adverse odor in the reach in cooler in the retail area holding cheesecake. KDA_5_20411A - --The produce prep handsink has been removed.
