The heat for the buffet is turned on at 10:45. Foods are properly heated in the kitchen before bringing to the buffet. Leftover foods are either placed in trash can, taken home by staff, or donated to a shelter. KDA_3_50116A2 - --Located at the cold buffet, there were PHF food items being held above 41F. Cantaloupe was 54F and cut lettuce was 55F. PIC said they had been on the line for 1 hour. COS. Foods were taken to cooling unit in the back to cool down.
KDA_3_60211B1 - --Located on the preparation table there were 3 red cups with powder substance in each cup with no labels. PIC said one was salt, one was pepper, and one was MSG. COS. Items were labeled. There was a large white storage bin with white powder substance inside and no label. PIC said it was cornstarch. COS. Item was labeled.
KDA_4_20211A2 - --Located on the table for clean plates, there were 2 out of approximately 50 china plates that were chipped on the rim. COS. Items were placed in trash can.
KDA_4_60111A - --Located on the table for clean dishes, there were 5 out of approximately 50 pans with sticky labels on the pans. COS. Items were sent back to dish area for removal of sticky label and rewash.
KDA_4_60111C - --The vent hood area has an accumulation of grease residue. The floor of the WIC has an accumulation of black debris under the shelving and along the wall. The gaskets on the WIC have an accumulation of black debris. The mixer base has an accumulation of dried food debris. The cutting boards have an accumulation of scratches and black debris. The shelving in the storage area has an accumulation of cob webs on the top shelves and ceiling areas.
KDA_4_60211E4 - --The soda machine ice chute has visible pink mold on the ice surface.
KDA_4_70211 - --The in use dish machine test 0ppm for chlorine concentration. COS. Dishes are being wash in 3vat sink until machine is fixed.
KDA_5_20515B - --The AVB on the mop sink faucet leaks when the water is turned on.
KDA_7_10211 - --Located in the dish area there were two spray bottles with no labels. One was yellow liquid and one was orange liquid. PIC said both were degreaser. COS. Bottles were labeled.
