KDA_3_50116A2 - --Cut raw beef was stored on the west prep table in a bucket of water with an internal temperature of 65 F. The beef had been setting at room temperature for a short period of time, as per employee. (COS-placed on stove to cook). KDA_4_10111A - --Granulated sugar was stored in direct contact with a multi-purpose gray plastic container under the front counter. (COS-sugar was placed in a food grade bag). KDA_4_20311 - --The stem thermometer, stored behind the paper towel dispenser by the kitchen hand washing sink, had a room temperature ambient air temperature of 42 F. (COS-thermometer was removed from service). Another thermometer was calibrated for use. KDA_4_50119 - --The maximum water temperature at the 3-vat sink was 85 F. (COS-hot water of 118 F was supplied). KDA_4_90311B - --Stainless steel food storage containers were stacked together wet on the shelf west of the 3-vat sink.
