One with hot soapy water, one with rinse water, and one with sanitizer. --The sanitizer is measuring less than 100ppm quaternary ammonia. The label calls for 200-500ppm. It was not being used. The owner said it had been a while since she had set the sanitizer water up. She added sanitizer to the mixture so that it measured 200ppm.

KDA_4_30112A - --There is no 3 vat sink available for ware washing. COS - Spoke with the owner about her options today. They have limited items needing to be washed. She is completing a variance request and providing it to the inspector today to be submitted for the state. She will use 3 tubs
KDA_4_90312A - --There are boxes of plastic silverware, portion cups, and food trays in a cabinet in the restroom. COS - the owner moved all these items out of the restroom cabinet into the separate storage area.
KDA_5_30216A - --The owner has a regular garden hose hooked up to carry potable water to the trailer from the rural water supply. COS - she removed the garden hose connection. She will have an approved drinking water hose in place prior to opening.
KDA_6_20214 - --The restroom door is not self-closing. It is being kept closed between uses.
KDA_6_30114 - --There are no hand washing signs available at the hand sinks. Corrected on Site (COS) - provided with signs to be posted.
KDA_7_20811B - --There is a first aid kit stored in the cabinet above the sinks. It is directly next to/against styrofoam plates and a container of salt. COS - the owner moved the first aid kit.
KDA_Defacto - --Ambient air in cooler: 34.2 F --At this time the owner is planning on using bleach as a sanitizer. She does not yet have the bleach, or chlorine test strips to go with it. She will obtain sanitizer and test strips prior to opening. --Described how to calibrate her thermometer using a glass of very icy ice water to calibrate it to 32 F. --Let the owner know that if she does get other coolers, they must have thermometers integrated or affixed in the warmest location of the coolers. --Owner said she is planning on having a prep area outside. Let her know that a hand washing station must be available outside with soap, paper towels, 100 F water, and a hand washing sign for this to be acceptable. --There are sleeping quarters on site (a bedroom area where a bed is located). Per the owner, this is not in use as sleeping quarters, merely as an extra storage area. She is removing the bed prior to opening so that the area may be fully utilized for dry storage. --There is one cooler inside and the owner is planning on having two more small refrigerators outside to plug in and keep products cold. --They are planning on using bleach as a sanitizer. They do not yet have bleach on hand to use. Let the owner know that she needs to use an unscented bleach that is labeled for use on food contact surfaces. --This is a licensing inspection on an establishment that is not currently open and has no food on site. --Water will be coming from city/rural water supplies.
