PIC stated the food items were cooked the evening of 1-4-15 to prepared for the reopening today. --Food employee was cutting up a cooked chicken using bare hands. Food employee stated the chicken will be cooked a second time after the chicken is completely cut into chucks. --Hot water 104F, handsink. --Make table tofu 36F, raw shrimp 38F. Make table cooked sausage 39F, chopped lettuce 40F. Walk in cooler raw chicken 40F. --No pest control invoice provided. PIC stated the last pest control service was in the month of November. --Passed License inspection. --PIC provide test kit for the use of chlorine. Warewash machine tested 100 parts per million of chlorine. Sanitizer bucket tested 300 parts per million of chlorine. --Steam rice 179F.
