KDA_7_10211 - --In the kitchen, one unlabeled spray bottle containing a red liquid (fabuloso as per the sports director)(labeled). KDA_Defacto - --frozen foods stored frozen ambient temperature of the kitchen reach in cooler = 34 degrees --Note: employees are using the kitchen reach in cooler for storing a large amount of personal foods. Suggest using the reach in cooler in the back room for personal foods. --Note: The commercial dishwasher has not been ran since last summer. An employee attempted to run it stating it (water in tank) has to heat up first as per instructions. It would not heating up enough during the inspection so it could be checked. After about 45 minutes the gauge showed about 120 degrees. Suggest checking for a mineral buildup on the heating coils. The dishwasher must be functioning so it can be checked during the reopening inspection. At the end of the inspection, the built in thermometer showed over 200 degrees.
