  • KDA_3_50116A1 - --There were approximately 8 baked potatoes in the steam table at the front counter that measured at 121F. PIC stated the potatoes in the back were cooked 20 minutes prior and the potatoes in the front were made approximately 2 hours prior. COS- PIC voluntarily discarded the front (8) potatoes per his discretion and adjusted the heat setting.
  • KDA_3_50116A2 - --There were containers of sliced tomatoes 50F, cooked pasta 47F, shredded cheese 47F, chicken 52F, lettuce 50F, spring mix 54F, mozzarella 49F, crushed tomatoes 50F, diced tomatoes 52F, cooked pasta bow tie 49F, asiago shredded cheese 48F, mac/cheese 49F, bbq brisket 53F, quinoa 52F, sour cream 51F and butter 54F in the cold hold station in the front at the back counter. The ambient temperature measured at 46.2F. PIC stated all items were stocked from the walk in cooler at 1PM except for the mozzarella, crushed tomatoes and quinoa which were stocked this morning 1.27.16 at approximately 9AM. COS- PIC moved all items to the walk in cooler for immediate cooling and voluntarily discarded the crushed tomatoes, mozzarella and quinoa.
  • KDA_4_30111 - --The ambient temperature of the cold hold station in the front at the back counter measured at 46.2F. PIC moved some containers back to the walk in cooler, he voluntarily discarded items stocked more than four hours prior and he called for immediate maintenance.
  • KDA_4_60111A - --There was old food debris along the food contact surfaces of 3-5 plates under the cook line and a knife in the wall holder on the back wall. All above mentioned items were being stored as clean. COS- PIC moved the items back to the warewashing area for additional cleaning. There were approximately 3 plastic food storage containers with date sticker residue along the sides being stored on the clean utensil rack in the back. COS- PIC moved the containers back to the warewashing area for additional cleaning.
  • KDA_4_90311B - --There were several plastic and metal food storage containers stacked together wet on the clean utensil rack in the back not allowed to properly air dry.
  • KDA_5_20315 - --There was no intermediate vent on the carbonator pump in the cabinet (lobby area) under self service soda unit.
  • KDA_6_50112A - --There is dirt and old food build up along the wall beside the bulk ice unit in the back. There is a build up of old syrup residue in the cabinet under the self service soda unit in the lobby.
  • KDA_Defacto - --baked potatoes 140 (steam table front) rice 177 (steam table 2) chicken chili 174 (steam table 3) broccoli cheese soup 155 (steam table 4) beef stew 161 (steam table 5) --Chlorine measured at 50ppm in dishmachine, test strips were provided. --salsa 41 (glass reach in cooler front) cheese 42 (ice hold front) cheesecake 36 (dessert display cooler) lettuce 42 (cold hold 1) chicken salad 40 (reach in cooler 1) cut melon 39 (cold hold 2) cut melon 36 (reach in cooler 2) porkloin 40 (upright reach in cooler back) pasta salad 40 (salad bar top) boiled eggs 41 (salad bar reach in cooler) shrimp 40 (walk in cooler) --There is a pest control company contracted, no paperwork provided. No activity.
