In kitchen reach in cooler (RIC): milk was at 51.3F and cheesecake at 50.7F. COS: PIC discarded all potentially hazardous items from RIC. Establishment had new unit delivered today that they will begin using.
  • KDA_3_50118A1 - --In WIC, cooked mushrooms were dated 1/18, herb butter was dated 1/17, and alfredo sauce was dated 1/21. COS: PIC discarded items.
  • KDA_3_60311B - --Menu contains consumer advisory reminder but is lacking disclosure of items available to be cooked-to-order. Owner did not wish to correct immediately but is ordering new menus in "a couple weeks" and will include both parts of the consumer advisory in the new menu.

  • KDA_3_30414B1 - --Quaternary sanitizer solution concentration in all wiping cloth buckets was well over 400 ppm. COS: PIC added water to buckets to dilute sanitizer to proper concentration. PIC will call chemical company for maintenance.
  • KDA_3_50116A2 - --In WIC, baked beans were at 45.3F, heavy cream was at 46.4F, milk was at 45.3F, cream cheese was at 44.6F, feta cheese was at 46.1F, turkey roasts were at 46.2F, raw chicken breasts were at 44.5F, 46.2F, 45.7F, 43.5, 54.2F, 48.8F, and 48.6F, hamburgers were at 46.1F, 44.9F, and 44.2F, steak was at 47.0F, raw salmon was at 44.4F, pork chops were at 44.9F, deli ham was at 44.9F, cooked rice was at 47.2F, marinara was at 46.9F and 46.6F, tomato sauce was at 46.2F, and alfredo sauce was at 44.3F. WIC had been repaired this morning, shortly before 12:00pm. COS: Items out of temperature were discarded. Bloody Mary mix at bar was at 53.1F. It had been opened approximately 3 hours earlier. COS: PIC used ice bath for rapid cooling. Milk in reach in cooler (RIC) was at 54.8F. Milk was is cooler since this morning. COS: PIC poured milk down drain. In drawers beneath grill, raw chicken breasts were at 44.7, deli turkey was at 45.0 and cooked chicken was at 48.2F. COS: items discarded. In pans next to grill, spiced butter was at 66.4F and regular butter was at 72.2F. COS: items discarded and replaced with new items in ice bath.
  • KDA_3_50118A1 - --In WIC, two tubs of caso blanco were dated 1/7/16 and one tub was dated 1/3/16. COS: PIC discarded all three tubs.
  • KDA_3_50118A2 - --In MT 2 bottom, hotdogs were not labeled. PIC said they were prepared two days ago. COS: PIC correctly dated container.
