Person in charge said make table was cold at 11:00AM. Also person in charge said that food in make table and reach in make table was prepped at 11:00AM or shortly after. Person in charge said the make table and reach in was opened and closed all through the lunch crowd. COS-all food items were moved to the stainless steel reach in. Ambient of make table was 57.4F. Sitting out on cabinet by coffee machines were skim milk at 64.1F and vitamin D milk at 55.4F. Person in charge said skim milk had been out since 11:00Am. Vitamin D milk had been out since noon. Sitting in a container of ice was a container of half and half at 56.1F. Person in charge said it had been out since 11:00AM. COS-these items were placed in reach in cooler. Since they have a reach in cooler large enough to accommodate the food they hold and serve I issued a FWL.
- KDA_3_50118A2 - --In the stainless steel reach in, there was single serve containers of made on site pea salad with out date marking. Person in charge said they made in on Monday when peas were still frozen. COS-bottom container was dated. Since this is less then 10% of the food they serve I issued a FWL.
- KDA_4_20211A2 - --Stored on the south wall on a shelf, was one clear container that had cracks along the food contact surface. One red lid was burned across the food contact surface. COS-items were discarded.
- KDA_4_30111 - --Make table was not cooling PHF to 41F.
- KDA_7_20111A - --Underneath the three compartment sink, there was a spray bottle with a clear liquid in it. Person in charge said it was bleach water. COS-bottle was labeled. Underneath the coffee maker was a clear spray bottle with a clear liquid in it with out a common name. Person in charge said it was soapy water. COS-bottle was labeled.
- KDA_Defacto - --educated on cooling large quantities in ice. Also educated on cooling to 41F in 6hrs. --In the stainless steel reach in: opened salami 39.8F. In the make table: black forest ham deli meat 41.7F. --made on site mushroom soup 148.1F.
