  • 2-301.14(E) - --The employee scrapped dishes she had clean off customers table, then loaded them into mechanical warewashing machine. With out washing her hands, she unloaded the clean dishes. COS-the dishes were placed for rewashing. Provided hand washing education.
  • KDA_3_10111 - --There was an opened package of deli sliced turkey in the kitchen reach in with out a date. Person in charge did not when it was opened. In the make table reach in, there was an opened package of sliced deli turkey with a date of 10/5/15. Person in charge said that was the date they received the turkey. He did not know when it was opened. COS-turkey was voluntarily discarded.
  • KDA_3_30212 - --Above the make table in the kitchen, a container with a white powder was without a label. Person in charge said it was powder sugar. COS-container was labeled.
  • KDA_3_30414B1 - --The cloth sanitizing bucket had 100 PPM Quaternary. Employee said it had been out for about 1.5 hours. COS-bucket was made to 200 PPM Quaternary sanitizer.
  • KDA_3_50116A2 - --In a bowl of ice on the serving counter, single serve cups of fruit with cut melon, the cut melon was at 48.1F. person in charge said they come off serving line at 9:30 AM. COS-Fruit was voluntarily discarded. Person in charge said it's discarded daily at 9:30 AM. Inspector talked to person in charge about using time as control on the fruit cups. Falls into the time line for cold holding. Issued a FWL letter.
  • KDA_4_20211A2 - --In the mechanical warewashing area, there were about ten lids with a corner broke off. COS- lids were discarded.
  • KDA_4_60111A - --Above the make table in the kitchen, there were about 30 metal pans with sticker residue on them. On a shelf in the warewashing area,there were three plastic containers with sticker residue. Stored as clean at the end of the mechanical warewashing machine, were two white bowls that had dried on food debris. COS-all items were place to be rewashed.
  • KDA_6_30112 - --The hand washing sink in the kitchen, was with out hand drying towels. COS-towels were placed at hand washing sink.
  • KDA_6_50118 - --The hand washing sinking in the kitchen has an accumulation of dried on debris.
  • KDA_Defacto - --Frozen food is frozen. --In the kitchen area reach in, made on site scrambled eggs 38.3F. In storage room 1 victory reach in, turkey breast 37.8F. In the storage room reach in C1, ambient was 39.8F and in reach in B4 ambient was 38.3F. In the reach in by the check in desk, single serve yogurt 40.6F. In the serving area front case, yogurt 42.7F. True reach in, soy milk 38.4F. Make table cooler left side, shredded cheese 38.8F, reach in, sliced deli turkey 36.8F. Right make table cooler sliced tomatoes 34.3F, reach in, made on site egg, ham and cheese croissant 37.5F. --In the steam table in serving area, oatmeal was 170.5F. --Mechanical ware washing machine using hot water for sanitizing was 168.8F.
