  • High Priority - Cut lettuce/cabbage/spinach/kale/chard cold held at greater than 41 degrees Fahrenheit. Cut lettuce cut at 10:30am was 50° at 2:15pm. The establishment do not have a freezer to chill the lettuce.
  • High Priority - Cut tomatoes cold held at greater than 41 degrees Fahrenheit. Cut tomatoes was 48° in the reach in cooler at the prep line. Setting for the unit was on 2. Manager changed the setting. Tomatoes were cut at 10:30am
