- Food is properly labeled
Observed several prepackaged food items for customer self service that contained more than one ingredient and did not have an ingredient label including: Caesar salads, hummus, yogurt parfaits, chex mix, and puppy chow mix.
- Food storage - preventing contamination from the premises
Observed boxes of single use cups stored on the floor in the back storage area. Uncovered slices of pie and other baked goods are displayed for customer self-service without protection (sneeze guards, etc.).
- Bare hand contact with ready to eat foods
Observed food handler touch ready to eat cookies with bare hand while arranging the cookies on the tray.
- Roasts held at a temperature of 130°F or above
The following products on the buffet lines were held at temperatures ranging from 44 F-50 F: cut melon, slices of cooked chicken, deli meats, pasta salad, and raw sprouts. These product containers were stored on ice and were placed on the buffet line for service for less than 15 minutes. Lemon meringue pie set out on the buffet line without temperature control temped at 49 F. Product placed in a mechanical refrigeration unit.
- Food on display is protected from contamination by consumers

- equipment food contact surfaces and utensils clean to sight and touch.
Food dicer that had not been used recently was stored dirty (wall by walkin freezer).
- Removing dead or trapped birds, insects, rodents, and other pests
Observed an accumulation of mouse feces in the corner of the same room where packaged beverages are stored. Area was cleaned and sanitized during the inspection. Observed light shields in the dry goods storage area off of the kitchen with an accumulation of dead bugs.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Raw animal foods not adequately separated from precooked or ready-to-eat foods during storage-raw red meat stored in walk in refrigerator above container of pickles. Product was moved to a lower shelf. Corrected at time of inspection.
- Handwashing signage
Handwashing sign was not posted at one of the handsinks along buffet service area and the employee bathroom.
- Light bulbs, protective shielding
Observed lightbulbs above plates and beverage containers in the back storage room are not shielded.
