Observation:Has some chemical wipes stored on shelf adjacent and above food items, must store separate from food and food service items. Moved to separate shelf on lowest rack now.

Observation:Shelving racks in walk in cooler, almost empty of food, are soiled with some areas showing some rusty areas. Plans to clean during winter break, may need to resurface to provide smooth, cleanable surfaces.

Observation:Has packaged single serve items stored in a reused cardboard box, must provide a smooth, cleanable, nonabsorbent container for this purpose., ie plastic.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:Chlorine sanitizer at 10 ppm today after several cycles, will have service done on machine if concentration is not at 50 ppm after repeated usage, has not been used regularly now for a few weeks during winter break.
