Observation: Observed hot foods in display warmer were not marked with hold times per Casey's policy - most foods had been in warmer for at least 30 minutes. Corrected on site.

Observation:Observed open drink on sub kitchen countertop, corrected on site.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observation:Observed meat balls in steam pan ranged in temperature from 120 to 147 degrees, chicken and brisket ranged from 127 to 157 degrees. Brisket and chicken were stirred, meatballs reheated in oven, corrected on site.
- Food storage, prohibited areas
Observation:Observed boxes of food stored under condensation drips in grocery walk-in freezer, there is ice buildup on the outside of the boxes which is a potential contaminant if it gets onto the interior packaging.
- Test kit provided and used to measure sanitizing solution concentration
Observation:The quat test papers in use had expired and the colors degraded, no longer able to accurately measure sanitizer concentration.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:There was no detectable level of sanitizer in third sink - employee stated he added 1/2 pump of sanitizer. After 2 more full pumps, sanitizer was at proper concentration. Corrected on site.
