Should be changed out every couple hours if used frequently. Physical facilities maintained clean: Cleaning frequency, restrictions, and methods Observation: walkin freezer needs floor cleaned Food temperature measuring devices are accurate to ±1°C or ±2°F in the intended range of use Observation: thermometer in chicken hot hold case starts at 150deg and does not have the correct range. Should start no less than 135deg since that is hot hold temp Warewashing equipment cleaning frequency, operation, use limitations, and clean solutions Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet. Observation:all hand washing sinks are not hot enough today. Produce prep 69deg, meat room 80-83deg, restrooms 70deg. Should be at least 100deg.
