Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours Observation: Several items not marked with a date.
Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: Prep Cooler missing thermometers.
Equipment location, installation, repair, and adjustment Observation: Lots of water in the bottom of the prep cooler on the cookline, water is spilling over onto the floor.
Cutting surfaces maintained Observation: All 3 cutting boards have dark cuts.
Backflow protection air gap, device standard, when required
Food storage - preventing contamination from the premises Observation:Food stored on the floor in the storage room.
Prohibited storage areas for clean equipment and utensils Observation: Several pots and pans stored right side up.

Routine
Cleanability of floors, walls, and ceilings One ceiling tile missing in the kitchen. Also the wall under the sprayer bay by the dishmachine never got replaced after the wait/waitress area got installed.
