PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control Observation: double hot hold Cres Cor cart breakfast bowls in top door were only 110deg but bread in bottom was 130deg. Unit thermometer showed 190deg. Top door may not be sealing correctly? Thermometer may be positioned in back? Also the short Cres Cor #01630 garlic bread was 110deg-unit may not have had enough time to preheat. Rechecked at end of inspection and temperature had not risen.
