Observation: Walls behind equipment and floor under equipment in the pizza prep area are soiled.

Observation: Exterior surfaces of cooking equipment and storage equipment is soiled.

Observation: Floor in the pizza prep area is peeling and flaking, making it not easily cleanable.

Observation: Food stored on the floor in the walk in cooler and in the dry storage area.

Observation: Test kit not present to check sanitizer concentration.
- Using a handwashing sink- operation and maintenance
Observation: Handsink in the kitchen is missing the knob for the hot water. Plumber was in on 3/13/14 to look at the sink.
- Light intensity
Observation: Light fixtures in the pizza prep area are not working properly to give enough light to the area for the work being done. Electrician was in on 3/13/14 to address the situation.
