Observation: Employee health forms are on file for non owner employees but shall be complete for owners.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Date mark all ready to eat foods opened and held refrigerated greater than 24 hours. feta cheese, gyro meat not date marked at inspection. Undated foods were discarded at inspection.
- Chemical sanitizer generating device is operated in accordance with manufacturers instructions and displays the EPA registration number on the device
Observation: Soap is added to sanitizer for wiping surfaces. Surfaces shall be rinsed with water after cleaning then sanitized with an approved sanitizer. do not mix soap and sanitizer together.
