3-501.17(A) - --There was a package of cooked beef that was cooked prepared in the MU that was thawing in the MT with no date marking on the package. PIC said they pulled it from the freezer today. COS Item was updated with the correct date marking.
KDA_3_30211A1b - --There was two small chubs of raw pork chorizo being stored on a shelf directly above a pan of cooked RTE pork located in the bottom portion od the MT. COS Raw pork chorizo was placed on the bottom shelf away from the cooked RTE pork.
KDA_3_50118A1 - --There was a plastic container of cooked pork being stored in the bottom portion of the MT with no use by date on the container. PIC said it was prepared on 11/30/2015. COS Item was date marked.

3-501.17(A) - Pf - Date Marking (Prepared on-site, removed from freezer and not updated) POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR SAFETY FOOD) prepared and held in a FOOD ESTABLISHMENT for more than 24 hours shall be clearly marked to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded when held at a temperature of 5ºC (41ºF) or less for a maximum of 7 days. The day of preparation shall be counted as Day 1.
