--Noted previously, this place prepares an extensive array of multi-ingredient meat products. They have begun preparing their own luncheon meats also. Owners have attended HACCP and developed some HACCP plans. They do not have the plans completed and implemented for all ROP products.
Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
--Haddock (fish) was in reduced oxygen packages and was not frozen. Fish in ROP must be frozen before, during and after ROP.
Labeling (46.422)
--This is a large diverse facility. They produce numerous products. Some of these products are not labeled with ingredients
Retention, Drainage & Delivery of Sewage, Other Liquid Waste & Rainwater (46.862(b)-(f))
--One floor drain in a storage room is not draining. One condensation drain in the produce walk in cooler is not draining. Owner said there is a clog in one of his tanks. Plumbers arrived during inspection to correct this matter.
