--Same need for a submitted HACCP plan for the reduced oxygen packaging, store made and/or packaged cheeses, smoked meats and frozen foods. The plan must contain at a minimum a hazard analysis and a flow chart, and the components detailed on the given handout.
- Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
--No 30 day use by date code (new as of May 2014, as detailed on given handout) on store-made and vacuum-packaged sliced lunch meat, smoked brisket offered for sale from retail display coolers, and bulk packages of smoked meats within walk-in cooler. Correct immediately.
- Labeling (46.422)
--Continue with your labeling program, ALL store made and/or packaged multiple ingredient foods must have a complete ingredient statement, as done for the humus, potato salad, frozen pasta, potato soup (it was easier to list what products had the ingredients, rather than all that did not).
- Cooling, Heating, & Holding Capacities (46.611)
--Two (2) circulating fans not working on right side evaporation unit within fresh meat walk-in cooler.
