Observation:Observed shell eggs stored above milk cartons in kitchen refrigerator, removed, corrected on site.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:The sanitizer level was below 50 ppm in the dishwashing machine - the container was empty and there is no replacement sanitizer available. Discussed washing dishes and utensils in the machine then sanitizing by hand with 1 tablespoon of unscented bleach per gallon of warm water for 30 seconds then allow dishes/equipment/utensils to air dry, until a replacement container is purchased and connected. Corrected on site.
- Food shall be obtained from sources that comply with law
Observation:Observed uninspected whole chickens in chest freezer in dining room and farm eggs from an unapproved source in re-used cartons in kitchen refrigerator. Removed from premises, corrected on site.
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation:The hamburger grill is still in the open and not under a ventilation hood to collect grease, repeat violation.

There were no thermometers in kitchen refrigerator (left side unit) and the serving line white refrigerator.

Observed employee handling cut ham for salad bar with bare hands - corrected.
- Drying mops
There is no covered wastecan in employee restroom. There is no mop hanger to allow mops to hang to air dry - repeat violation.
- Cleaning frequency of food contact surfaces (PHF/TCS)
Observed dried food particles on upper and lower guards on back side of meat slicer blade - slicer was last used yesterday, unit was dismantled for cleaning and sanitizing. Corrected.

Grill used for frying hamburgers is not under the ventilation hood - grease is collecting on light covers and ceiling above grill.
