Observation: Eggs were stored above ready to eat products in cooler. Head cook corrected by rearranging so nothing was below eggs.

Observation: Clean containers were stored up-right in a position that would not allow them to drain. Head cook corrected by inverting containers

Observation: Table mounted can opener had debris build up on blade. Head cook corrected by removing to be cleaned.

Observation: Chicken was thawing in the hand sink, head cook corrected by moving to prep sink.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observation: Taco meat and beans cooked the night before were sitting in steam table to reheat. Head cook placed them in the oven to re-heat to 165* before being placed back in the steam table.

Paint has worn off of areas of the kitchen floor making the areas not easily cleanable. Light bulbs above the ice machine are not shielded. Restroom doors are not self-closing.

Furnace room was not accessible due to clutter. Observed straw/hay material in one corner. Room needs general organization and cleaning.

Observed mold growth on the interior of the ice machine. --Two wooden knife blocks in the kitchen are not easily cleanable and must be removed. Light shields and ceiling fan blades near the stove are soiled (REPEAT FROM PREVIOUS INSPECTION).
