    --A food employee was observed touching cut strawberries and blueberries - a ready to eat food - with bare hands. COS by putting on gloves.
  • Variance Requirement for Specialized Process Methods (46.401)
    --Food Facility did not obtain a variance from the Department before preparing (precooked) hams at a temperature of no greater than 90F and held at a temperature less than 135F and greater than 41F for a period of 90 minutes without a kill step in the process. which is a specialized processing method. Information on submitting for a variance was provided at the time of inspection. Facility will discontinue practice until approved by the PDA.
