    --Frozen meat food observed thawing at room temperature on the prep table in the kitchen, which is not an approved thawing method. This is an unsafe method for thawing and risks the meat to contamination. INFORM/REMIND ALL FOOD HANDLERS TO ONLY USE SAFE METHODS FOR THAWING TODAY AND COMPLY EVERY DAY, namely: a)in refrigeration of 41?F or lower, b)under cold, running water of 70?F or lower, or c)quick-thawed in the cooking process.
  • Design & Functionality of Temperature Measuring Devices (46.590)
    --Interior temperature measuring device for ensuring proper temperature of equipment is not available or readily accessible in the following equipment: 1- Hobart 2 Door Refrigerator 2- True 1 Door Freezer
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    --Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Obtain wither chlorine or quaternary ammonia test strips to comply.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    --Non-food contact surfaces not cleaned at a frequency to preclude accumulation of dust, debris, crumb, and splash. Clean and sanitize the window sill behind the mop sink.
  • Certified Food Manager (CFM)
    --The food facility does not maintain a CCHD Certified Food Manager as required. Corinne Hunsicker will be the CCHD CFM. A CCHD CFM application will be mailed to the facility. EHS Myers observed an approved training course certificate valid through February 2019.
  • Cleanability of Floors, Walls, & Ceilings (46.921)
    --Ceiling tile in the kitchen area to the left of the Hobart 2 door refrigerator is made of absorbent material and is stained / roughened / and is not a smooth, easily cleanable surface. Replace ceiling tile with food / kitchen grade tile.
  • Handwashing Facility - Handwash Cleanser, Hand Drying, Signage, Handwash Aids or Devices Use Restriction (46.941(b)-(e))
    --Soap was not available at the handwash sink to the left of the cook line area. Install soap bar in the interim until soap delivery arrives.
