    --The fire suppression system inspection tag for the cooking exhaust hood is dated 2010. These systems are to be inspected every six (6) months. Correct immediately.

    --Clean the cooking exhaust hood filters within 7 days.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    --Sweep out the Walk In Refrigerator. Correct within 3 days.
  • Outer Openings Protected, Exterior Walls & Roofs Protective Barrier (46.922(e)(f))
    --The screen door in the Kitchen needs repaired-the top portion of the screening has pulled away from the frame and the bottom portion has a small hole that needs patched. Repair the screen door to protect against the entry of insects, rodents, and other animals. Correct within 7 days.
  • Mechanical Ventilation as Needed (46.944)
    --Repair or replace the exhaust fan in the Ladies Toilet Room-it is not working. Correct within 7 days.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --The floor around and under the free standing deep fat fryer is greasy and needs cleaned. Correct within 3 days.
  • Certified Food Manager (CFM)
    --This food facility has recently lost its certified food manger (CFM). Mabel Spann informed me today that she plans to sell the business within 6 months. Since you plan to sell the business, the Department will grant an extension from 3 months to 6 months to obtain a CFM. A CFM will now be required by December 10, 2014. I have enclosed a CFM Course List.
