    --The fire suppression system inspection tag for the cooking exhaust hood is dated August 2013 and is over due for inspection. These systems are to be inspected every six months. Correct immediately.

    --Provide quaternary ammonia sanitizer test strips or test kit to determine appropriate sanitizer concentration at the 3 bay sink within 7 days.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --The interior canopy of the cooking exhaust hood was observed with an accumulation of dust, dirt, food residue. I was informed this would be cleaned today before you open the facility tomorrow.

    --Darryle Amenta is registered to take the CFM Course with Paster Training on April 21, 2014. You have until July 2, 2014 to obtain a Certified Food Manager since this is 90 days after taking over the business.
