- Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
Observation: The concentration of the quat solution was measured at 500 ppm. This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
Correction: Maintain the concentration of quat solution at 150-400ppm. Verify concentration using the appropriate test kit. CFM diluted quat solution with water and reading came out to 200ppm.

The purpose of today's visit is to conduct a routine inspection. Note: Discussed with manager to either put only one of each kind of salad to make sure that the temperature stays 41F or below. The cold plate on service line is not capable of holding cold foods. Also, discussed about not putting salads out during breaks or before the serving time. OR put the salads in the milk cooler.

Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: chicken on salad 46F--service line.
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.

The purpose of today's visit is to conduct a routine inspection. The manager mentioned that she saw some mice activity in dry storage area and requested for pest control services. They received pest control service last night, no evidence of mice observed during inspection. Recommend cleaning of the dry storage area and monitor for signs of infestation.

Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Sliced tomatoes 66F and 62F and grilled chicken on salad 59F. Note: Put back in refrigerator.
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth.

Observation: The ambient (air/water) temperature measuring device located in the following unit is not accurate in 10°F.
Correction: Ambient air and water temperature measuring devices that are scaled only in Fahrenheit shall be accurate to +/-3°F in the intended range of use.

Observation: The dumpster outside has missing sliding door.
Correction: Storage areas, enclosures, and receptacles for refuse, recyclables, and returnables shall be maintained in good repair.
- Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
Observation: Outside refuse container was uncovered.
Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.
- Mops in Air-dry Position
Observation: Observed that mops are improperly stored between use.
Correction: Store mops in a position that allows them to air dry without soiling walls, equipment, or supplies.
