Observation: The door gasket to the 4 door reach-in unit needs replacement.
Broken lids on the bulk food storage containers.
Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
Replace the lids to provide a smooth, cleanable surface.
- Warewashing Equipment, Cleaning Frequency
Observation: The interior surfaces of the mechanical warewashing machine are soiled with (food debris, limescale) that may decrease the effectiveness of the unit.
Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.
- Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 160ºF. The thermometer read 135°F
Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.

Correction: Clean the surface at a frequency necessary to preclude accumulation of grease.

Observation: The floors in several locations thru the kitchen need grout / repair.
Correction: Refinish or replace the floor material at the area designated so it is: smooth, durable and easily cleanable.

Observation: The corner walls at the dishmachine need sealing / repair.
Correction: Finish and seal (Concrete, Porous block, Bricks) to provide a smooth, nonabsorbent, easily cleanable surface.

Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices.
