Good job storing chemicals separate/below foods, single-use items and clean dishware. Great job with having employees beverages with both a lid & straw. Observed a good job of washing hands before putting on gloves. Reminder to have a designated area to always store personal items such as coats and purses separate from food, food wrap, and clean pans/dishware/utensils.
- Sanitizing Solutions, Testing Devices
Observation: There is no test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust, dirt, food residue and/or grease on the following nonfood contact surfaces: handles and sides of equipment, around the fryer, around/ on the floor near the prep coolers, floor wall junctions in numerous parts of the kitchen, etc.
Correction: Maintain nonfood-contact surfaces of equipment clean. Create a cleaning schedule to ensure all areas are cleaned several times each week to prevent the accumulation of old food particles, dust, etc.
- Lighting, Intensity
Observation: The light was not working in the walk-in cooler.
Correction: Provide at least 10 foot candles in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning. Not having proper lighting can encourage staff to hold the door open to unit raising the temperature. * Maintenance is aware & is fixing this soon*
