    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands - a person touched their face and had to be reminded to wash hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Hands - Where to Wash
    Observation: A food employee was observed rinsing off a food thermometer in the handwashing sink running water which is not allowed. Another employee asked if they could get water at the handwashing sink and that is not allowed.
    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints - the front of the hair is not being covered properly by the hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Correction: Protect food from miscellaneous sources of contamination.

    Observation: Toilet room doors are being kept open
    Correction: Keep toilet room doors closed except when cleaning or during maintenance operations to prevent insect and rodent entrance and the associated potential for the spread of disease.

    Observation: The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled. The dishwashing process is wash, rinse, and then sanitize.
  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: In use frozen water plastic bottle was handled in a manner that may contaminate food, food contact surfaces or utensils.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles - use an insulated container to prevent moisture accumulation and cross-contamination.

    Observation: @POTENTIALLY HAZ FOOD@ noted not being adequately cooled to prevent the growth of harmful bacteria - gravy.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. The gravy was disposed of at time of inspection and the proper cooling process was discussed.
  • Cooling Methods (corrected on site)
    Observation: The methods used for cooling were not adequate - gravy.
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: low block wall divider where non-stick sprays and other items are located.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Single service items observed unprotected from contamination - single-service items in the storage room removed from protective packaging.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser.

    Observation: Diced ham and chick peas in Raetone reach-in were cold holding at improper temperatures.
    Correction: Diced ham and chick peas were discarded and no other TCSs are to be held in reach-in. School officials have also put in a ticket to have reach-in repaired or replaced.
