Correction: Manager on duty agreed to assess all foods and discard any that have been above 41 F for more than 4 hours. All other foods will be relocated to the walk-in cooler (39 F).

Areas reviewed: 1) food and equipment temperatures (hot holding, cold holding & reheating), 2) food sources, 3) washing, rinsing and sanitizing of food contact surfaces, 4) commercial dishmachine operation (proper sanitizing temperature), 5) general cleaning and kitchen organization and 6) dry storage room and food storage areas. Discussed: 1) employee health policy, 2) food storage order (information provided to manager), and 3) rapid cooling of any leftover sauce and / or foods. Recommendation: Provide hearing protection for the kitchen personnel operating the dishmachine until it is fully repaired. Inspection reviewed with manager. Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. Manager agreed to correct.
