No foods are held over for next day service on a regular basis. Vegetables are canned or frozen. Food is prepared in kitchen and served by teachers in classrooms. EHSS discussed hand hygiene and glove use by teachers with PIC and Director. Discussed thawing methods, datemarking and reservice of food. Discussed the need for food safety training for any alternate kitchen staff when PIC is absent. Observed employee health information posted in kitchen. | Discussed the following with the person in charge: 1. Preparation procedures for some menu items that include cooking raw animal foods (ground beef, chicken) as part of the process. 2. Providing a cart or table next to the 3 compartment sink to store the dirty equipment and utensils until they are able to be washed and sanitized. The handsink next to the 3 compartment sink was used for the storage of the dirty equipment. 3. No eggs are served at this facility. Observed the overall facility very clean and well maintained.
