Food supplier for raw frozen chicken is Sysco. Time as a public health control is used for all items on holding line for 3 hours. Observed one walk in cooler out of order, no foods being stored in unit. Observed very good handwashing and glove use by all food employees. Discussed the following: 1. Chicken breading and preparation procedures. 2. Recommend removing oven from facility that is broken and not intended for use in the future. 3. No cooling in facility, all leftovers are discarded. Food items are cooked, held on the line, and then discarded in 3 hours. 4. Ensuring a catch basin for temporary handwashing station in the pit is available for grey water produced from handwashing.

Pit warmer and Alto Sham observed without thermometer. Discussed cooling and reheating (warmer for 1.30 and then oven for 30 minutes) Temperature logs observed. Burn sleeves: gloves overtop or only to wrist for contamination purposes. Recommend adding cooling and reheating of turkey legs, ribs and grilled chicken to temperature log. EHSS discussed complaint with managers. Every item on time control plan has a timer. EHSS queried employees on plan. Employees understand plan and how to discard food based on time and to reset timers. EHSS reviewed temperature logs for July 5-7. All holding temperatures within required regulatory limits. Time control in place in addition to temperature control. See complaint inspection report. Green bean are commercially processed with flavoring packet added in house.
