Use the three compartment sink to wash, rinse, and sanitize dishes OR use disposable plates, cups, silverware etc.

  • Critical: Food-Contact Surface Sanitized before Use after Cleaning (corrected on site)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: serving plates and silverware. (The residential type dish washer did not trigger the thermal label at 160 degrees F).
    Correction: In conjunction with Section 4-703.11, the food-contact surfaces of equipment and utensils shall be sanitized before use and after cleaning. (If the dish machine cannot sanitize with hot water/steam, then you will have to use the 3 comps sink with a bleach sanitizer solution, OR use disposable plates, cups, silverware for service and send serving utensils back to Jeffrey's if necessary).

This visit was made to conduct a routine food safety evaluation.
A food safety information pack binder was given and discussed.
I left the person in charge with some chlorine test strips since they do wash dishes in the 3 comp sink, and she agreed to buy some as soon as possible. One of the child care workers described that they use 1 TBS of bleach per one quart of water for the spray bottles, but she will check to see that it is 50-100 ppm when they have test strips.

This facility receives hot foods from Jeffrey's Catering, and keeps a log of the receiving temperatures. They have a dishwashing machine that they use to clean and sanitize utensils used for food service.

    Observation: Observed that the @Physical structure@ is not maintained in good repair.a0 Hand sink is puuling away from the wall and the air con side panels has a gap from the window frame.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: CFM has no knowledge of the policy.
    Correction: Create and implement an EHP that: 1) requires employees to report certain symptoms (vomiting, diarrhea, jaundice, sore throat with fever, or a lesion/infected wound) and illnesses (Norovirus, Hepatitis A, Salmonella Typhi, E. coli, or Shigella)
