The kitchen in this facility was found to be very clean, tidy and well managed. When cook staff was questioned concerning the differing cook requirements of shell eggs, pasteurized vs. non-pasteurized, although the correct answer is somewhat complex, the correct answer was provided. Very impressive! Great job!
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Potentially hazardous foods in the Continental make refrigeration unit were observed at temperatures above the regulatory maximum cold hold limit for these foods.
    Correction: All foods were removed from this unit and placed in the walk-in refrigerator. Repairs will be made to the unit before further use. A follow-up visit will be made to assure the unit is capable of maintaining safe food temperatures.

At time of this inspection foods were already in oven, unable to temp foods in preparation process. Proper thawing procedures were observed. This kitchen was found to be very clean and well organized. The Person-in-charge and other food staff were very conscientious and knowledgeable of food safety. Great job!
