| NOTE: Food items are catered by Fairfax County Food Service and all serving utensils and hot trays are returned to caterer for dishwashing. However, during the inspection EHS observed plastic trays and metal spoons being used for service. Per discussion with CFM, dishware is washed in the dishmachine. The dishmachine is not commercial grade as observed and noted on Routine Inspection report conducted 2/26/14. EHS will review the agreement in place in regards to the dishmachine to determine if that is the appropriate means for sanitizing the dishware. **EHS recommends using single service, disposable dishware, and flatware. Observed ceiling tiles above counter in kitchen stained from leak. CFM has called for repair prior to inspection and will be replaced this week. | The purpose of this visit is to conduct a routine inspection. During the inspection management informed that they have a new dishmachine. The dishmachine is not commercial grade however plates and cups are being cleaned in the dishmachine. I will review the agreement in place in regards to the dishmachine to determine if that is the appropriate means for sanitizing the dishware. I recommend using single service, disposable dishware, and flatware.
