    Observation: Different types of raw animal foods stored in such a manner that may cause cross contamination. Ground beef stored above beef on the same shelf.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: Ceiling tile missing and three have damage is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Vent filters in the hood system are not being maintained in a clean condition and vent for stand system needs cleaning
    Correction: Maintain hood system vent filters in a clean condition.

Fire suppression system checked March 2015. Consumer Advisory observed on Menus. Water sample still needed. Renewal fees mailed 3/17/15. Moving permit renewal to match other seasonal facilities in the same area.

Reviewed menu. HAmburger and chicken received raw fresh and frozen. Discussed cooking temperatures. Soups are homemade and used over 2 days. Discussed cooking, cooling and reheating methods and temperatures. Deli meats are sliced on location. Discussed CDC handouts. Employee Health Notice and training form 1B observed. Discussed no bare hand contact. Good use of handwashing and glove use. Recommend using temperature logs for cooking and cooling and recommend re dating items when pulled from freezer. Recommend taking temperatures of items hot held at night. Current water sample needed negative for bacteria.

    Observation: Fire Suppression system observed out of date. Last check was 7/2013.
    Correction: Have fire suppression system checked as soon as possible.
  • Critical: Food - Consumption of Raw or Undercooked Animal Foods
    Observation: Raw and/or undercooked hamburgers and breakfast eggs is/are provided on the menu, menu board, table tent or brochure without proper disclosure.
    Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods and identification of the animal-derived foods by asterisking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients.

    Observation: Manufacturer containers were observed reused for the storage of food(soup in ice cream containers)
    Correction: Discontinue the reuse of manufacturer containers for food storage. Provide approved reusable food storage containers designed for your food storage needs.

Facility was not open at time of inspection and will be open sporadically for several weeks. Facility was being cleaned and some either being discarded or removed by PIC at time of inspection.. Employee health information available. Form 1 B signed by employees. Oysters are frozen pre-packaged and pre-cooked. Steak is whole muscle portion cut on site. Minimum water temperature of quaternary ammonium at 3 basin is 75 degrees. No menu changes. Observed 47 seats.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the Imperial Freezer has heavy build up of frost on shelving.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of frost. Heavy build up can prevent good air circulation and compromise freezing and introduce contaminates into opened food packages.
  • Tableware - Preset Tableware (corrected on site)
    Observation: Preset tableware was observed unprotected from contamination.
    Correction: Discontinue practice of presetting tables or protect preset tableware from contamination by maintaining items wrapped, covered, or inverted.
