Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

Facility was not open at time of inspection and will be open sporadically for several weeks. Facility was being cleaned and some either being discarded or removed by PIC at time of inspection.. Employee health information available. Form 1 B signed by employees. Oysters are frozen pre-packaged and pre-cooked. Steak is whole muscle portion cut on site. Minimum water temperature of quaternary ammonium at 3 basin is 75 degrees. No menu changes. Observed 47 seats.

Observation: The nonfood contact surface of the Imperial Freezer has heavy build up of frost on shelving.
Correction: Clean the surface at a frequency necessary to preclude accumulation of frost. Heavy build up can prevent good air circulation and compromise freezing and introduce contaminates into opened food packages.
