Discussed with manager using time as a control for shell eggs and the bucket of fish that is left out on the counter. Will start to use smaller containers for the fish to ensure whole batch is not being temperature abused. IF manager wants to use time as a control for eggs he will need to submit a written plan to the EHS for approval. Still no current Certified Food Manager. Will issue Notice of Alleged Violation for not having a CFM.
