    Observation: Observed the plastic baffle on the interior of the bulk rear line ice machine has pink slime on it.
    Correction: Clean the plastic baffle/protect the ice from possible contamination when doing so.

Flies are still an issue but establishment was serviced. Continue to monitor situation and call for help by PCO. Hair to be properly restrained by all workers. Permit issued. Plumbing issues discovered yesterday have been remedied.

07/18/2014Follow-up
Follow up inspection was to have been conducted, however, no handsink in the kitchen is available for use. The one and only handsink is clogged with greasy water. Manager on duty stated workers are washing their hands in the "back" sink which is a 3-c sink but no sign of handsoap or handtowels are readily available to workers. Workers on the front line stated they washed their hands in the restroom. Store manager was called and company maintenance person was called again to come to this address to work on handsink. Good personal hygiene is a requirement. All workers are to wash their hands BEFORE donning gloves. Until repairman fixes the plumbing issue, set up middle compartment of the 3-c sink with soap and towels nearby. Before this sink is used for dishes you must clean and sanitize this area. Have manager call me tomorrow morning.

Cardboard has been placed under fryers to absorb grease. If there is a leak you must fix it. Cardboard is not a solution. Permit expires 7/31/14. Call for reinspection.

    Correction: Remove. Find an alternative.

    Observation: Butter brush found soiled.
    Correction: Clean and sanitize.

    Observation: The following items were found dirty: frozen burger bin edges, grill stack edges and outlets, side of grills, pot holders, underside of unused freezer in corner, can opener holder, fish freezer, drip trays to counter freezer, filter to counter freezer, edges to threshold of 2 door upright freezer, orange juice dispensing machine.
    Correction: Clean all thoroughly.

    Observation: The following areas found soiled: walk in freezer floor, floor behind fish fryers, floor behind tea urns, ceiling panels anad vents are either stained or dirty.

Other observations: Floor by bag in a box downstairs had syrup. Clean up area. Handsink drain is slow--possible obstruction. Sandwich line had products with time marked. Alot of grease flowing onto floor around flat grills. Permit inspection next time.

Reach-in refrigerator 37.6 degrees. Leaks have been repaired. Baking pans have been ordered. Some wheels have been cleaned. I know a better job can be done on areas under fryers and grills. Your grills are in constant use but cleaning must be done daily to keep build up from occurring. Leak from grill is being addressed. Continue to monitor time control and explain importance to those responsible. Permit issued.

    Correction: Food was removed. Have serviced.

    Correction: These were discarded. Prep person to place time on products brought to line. Those workers on line to ensure a time tag is on these food products. Work together.

    Observation: Baking pans are black with carbon deposits. Grease leak from grill. Grease is leaking onto floor.
    Correction: If these cannot be cleaned up to be smooth, replace. Find the problem and correct.

    Observation: Wheels to grills are greasy.
    Correction: Clean.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Cup dispenser missing covers.
    Correction: Protect cups.
  • Plumbing System Maintained in Good Repair
    Observation: Leak from filter on soda line downstairs. Water is running into walk-in downstairs. Possible leak from water heater.
    Correction: Repair but at least try to contain leak until it can be repaired. Remember if you have no hot water you should not be operating. Don't let that happen.

    Observation: Cleaner bottle hanging over single service/condiments by drive thru.
    Correction: PIC relocated.

No critical violations. Floor drain under 3 compartment needs cleaning. Floor in corner under 3 compartment needs cleaning. New "Teflon" surfaces used on grill as well as on clam shell top. Temperatures have increased on burgers for food safety. Blue gloves used to place raw frozen burgers onto grill. Observed good handwashing today.
