Permit, tax registration, certified food manager certificate all posted conspicuously. Certified food manager (CFM) present. Business hours M-Thurs 11-1030pm, Fri-Sat 11-1130pm Sunday 12-10pm. Capacity 30. Spoke with CFM regarding proper cold holding and employee health policy. No follow-up inspection.

    Observation: White plastic non-foodgrade "Thank You" plastic bags used to store food items. Food items intended for customer consumption and in direct contact with said bags.
    Correction: Protect food from miscellaneous sources of contamination.

    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration. Wiping coth solution insufficient at measured at 0ppm.
    Correction: Use a chlorine chemical test kit to ensure the sanitizing solution is maintained at the proper solution.

    Observation: Less than 20 foot candles of light was noted in the two door lowboy refrigerators in the kitchen.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms

    Observation: Harborage conditions exist. heavy accumulation of old, amber colored grease and food particles observed on the floor under the deep fryer and wok stove in the kitchen.
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
