  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Shredded cheese and cut meatballs on the cold rail of the pizza maketable unit were cold holding at improper temperatures ( meat balls-44F-45F * shredded cheese-42F-46F, 49F). The operator rapidly cooled the food items.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Improper handwashing procedures observed. No soap was used when washing hands after handling frozen, raw chicken wings.
    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.
  • Cloths - Wiping Cloths - Use Limitation
    Observation: Sanitizer in the wiping cloth bucket was observed at 0 ppm. Dispenser at the three compartment sink was not working properly. Technician was called to repair dispenser during todays inspection.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Drink cups were found stacked while wet after cleaning and chemical sanitization.

    Observation: No disposable towels were provided at the hand washing lavatory in the women's rest room.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Working container of degreaser are not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.
