    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

    Observation: Soft serve mix cold holding at improper temperatures in the outside milk refrigerator.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The hand sink had a container of ground beef in it when the inspection started.
    Correction: The person in charge noted that the ground beef was there and removed it from the hand sink. The hand sink is for hand washing only.

Good prevention of barehand contact. Good handwashing overall.
Managers and staff are certified in food safety and are committed to get more trained.
Very good cooling procedures used. Pot of chili is split into three pans, these pans are sitting in ice, and a ice paddle is used for each pan. The temperature is checked every 30 minutes or so.

  • Gloves - Use Limitation (corrected on site)
    Observation: Single-use gloves while worn during multi-tasked food preparation.
    Correction: Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.

    Observation: Employee failed to scrub hands during handwashing for 10 to 15 seconds. Time was at 7-8 seconds.
    Correction: Remember it is important to scrub hands to work up a good lather for about 10 to 15 seconds.

    Observation: Observed food handled with barehands when the inspection started.
    Correction: Remember to handle ready to eat items with utensils, deli paper, or single use gloves. After the initial observation, great glove use was observed by all employees.
  • Refuse - Covering Receptacles
    Observation: Dumpster was missing lids
    Correction: Provide lids for the dumpster so that it can be covered when not in use.
  • Toilet Rooms - Enclosed
    Observation: Toilet room door is not provided with a self-closing door
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
