This was a routine inspection. The facility as a whole was noted to be visibly cleaned. There were no visible signs of pest presence on premises observed at the time of this inspection. However, it was observed that the ambient temperature of the kitchen was high and may be affecting the ability of the refrigeration units to maintain foods at 41-F and lower. The certified food manager was advised to check the hood system for proper air exchange to ensure that heat is being adequately pulled out. In the mean time, the manager was further advised to lower the ambient temperatures of the refrigerators and to place only smaller amounts of milk in the milk coolers to ensure proper holding temperature. When possible to close the doors of the milk coolers in-between lunch periods The concentration of the quaternary ammonium compound at the 3-compartment sink was checked and tested and was observed to be 200 ppm.

Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Chocolate milk, fat free milk, and 1% milk.
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. (Discarded)

Observation: Outside refuse container was uncovered.
Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: The top of the ovens and steamers were noted to be dusty.
Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Clean the top of the ovens and steam units more frequently to prevent duct build-up.
