  • Critical: Sanitize / Hot Water / Mechanical/Thermolabel Test Verified
    Observation: Due to improper operation of the hot water, mechanical warewashing machine, the thermolabel did not turn black, indicating that food-contact surfaces of equipment and utensils are not being adequately sanitized.
    Correction: Immediately discontinue use of the dishmachine. Repair the dishmachine so that a thermolabel will turn black. Until the machine is adequately repaired, set up the 3 vat sink to manually wash, rinse and chemically sanitize food-contact surfaces.

* The purpose of today's visit was to conduct a routine inspection.
* Ensure all hand-washings sinks are providing an adequate hot water temperature of 100 degrees F for proper hand-washing.
* All non-critical violations must be corrected within 30 days and no later than the time of the next inspection.
* Hot Water Heater: Lochinvar TNR 125-060, 125000 BTU
* Dish-machine: Hobart LXI-H High Temperature Dishwasher, verified with thermo-label.
  • Handwashing Sink / Mix Valve or Combination Faucet , Water at 100°F
    Observation: Water from the handwashing sink located directly behind main registers was measured at a temperature of 91°F.
    Correction: Re-adjust water heater and/or hot water temperature valve to acheive minimum temperature of at least 100°F.
