- Equipment - Good Repair and Proper Adjustment (corrected on site)
Observation: The RIC in the front was observed in a state of disrepair and damaged. The RIC temperature thermometer and EHS's thermometer were reading about 60*F. PIC discarded all condiments and bread. The PIC called a repair company to fix the RIC.
Correction: Repair the RIC to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability.
- Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
Observation: The following equipment food-contact surfaces were observed soiled to sight and touch near the 3 compartment sink: knives, serving spoon, and serving scoop. PIC removed all items to the warewashing area.
Correction: Clean and sanitize these surfaces for food contact.
- Equipment - Cooking and Baking Equipment
Observation: The cavity of the microwave oven and sandwich oven were observed soiled.
Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.

- Physical Facilities - Cleaning Frequency and Restrictions
Observation: Dust accumulation observed on the ceiling above the Tornado Oven. Hood vent filter observed soiled with dust accumulation.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
- Critical: Toxics - Storage of Toxic Containers* (corrected on site)
Observation: Flying insect spray and Ant spray stored in cabinet above mop sink with cleaning supplies. Advised Person In Charge to remove items from the facility.
Correction: Store detergents, sanitizers, related cleaning or drying agents and caustics, acids, polishes and other chemicals separately from insecticides and rodenticides.
