Food supplier is US Foods. Observed good handwashing, datemarking, holding temperatures, and overall clean facility. EHSS discussed the following with the person in charge (PIC):
1. Facility Employee Health policy, Form 1B is used and reviewed by all employees.
2. Recommend ensuring food is stored at least 6 inches off the floor.
3. Recommend supplying all cold holding units with accurately functioning thermometers.

No violation noted during this evaluation.

Observed the employee health policy posted in the kitchen. Recommend that all staff sign a copy of the policy stating that they have reviewed and understand the policy.
Observed good food handling practices (handwashing & glove usage) and the overall facility clean.

  • Temperature Measuring Devices - Ambient Air and Water
    Observation: The ambient air temperature measuring device (degrees F) located in the lowboy reach-in cooler behind the sandwich prep unit is not working and therefore is not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the reach-in cooler where the drinks (milk) are stored..
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment and Utensils, Air-Drying Required
    Observation: Several food storage pans were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Refuse - Covering Receptacles
    Observation: The dumpster doors were open and the dumpster is located immediately adjacent to the building.
    Correction: Cover all waste containers when not in continuous use.
